Make the batter, omit the cornmeal, and increase the flour to 2 1/4 cups of all-purpose flour.

Let it sit at room temperature for an hour instead of overnight, and then proceed with the recipe.
The batter will rise a bit, but wont be as big as if it had risen overnight.
The flavor of the waffle wont be as complex as an overnight rise.
