How to Make Crispy Rice Sushi Waffles
This is a recipe thats very flexible and customizable.

I used about 2 tablespoons each of regular soy sauce, brown sugar and rice winevinegar.
The same goes for the hot sauce and Japanese mayonnaiseI used a spicy sriracha mayo and it was great.
The recipe below makes four sushi waffles.
Marinate for at least 30 minutes, or ideally a few hours.
In a rice cooker, or on the stove,cook the rice.
Place salmon skin-side up on a foil-lined baking sheet.
Take out of the oven, remove skin and flake the fish with a fork.

Heat the waffle maker on its highest heat, and grease with oil or cooking spray.
Pack the rice into waffle maker and let cook for about 8 minutes or until crispy and golden.
Mash the avocados together with the lime juice into a paste.
Once the waffle is crisp and ready, place it on a plate.
Smear the top with your avocado paste, and then add a layer of sliced cucumbers.
Add the flaked salmon.
Sprinkle sesame seeds on top and serve with pickled ginger and a lime slice.
