I also like doubling up on the ube flavor by piling ube ice cream on top of the cookie.
I prefer the store-bought ube halaya for this recipe in particular to achieve a chewy crinkle cookie.

Grease a 7 1/2-inch cast iron skillet with nonstick spray and set aside.
Beat together on medium-high speed until light and fluffy, 1 to 2 minutes.
Mix in the egg, ube halaya, and ube extract until the mixture is well combined.
Scrape down the sides and bottom of the bowl with a rubber spatula.
With a small sieve, dust the entire surface of the cookie with the powdered sugar.
Bake for 32 to 35 minutes, or until the cookie has puffed up and set.
Cool in the pan for 10 minutes and serve warm with scoops of ube ice cream.
Its best eaten straightaway.
