But one thing weve never changed is my moms go-to Passover breakfasta classic for a reason!

Matzo brei (rhymes with fry) literally means fried matzo (brei translates to fried in Yiddish).

And our way is pancakes.

Or, serve them with butter and a healthy glug of maple syrup.

I also like to drizzle mine withalmond butterand fresh-cut fruit.

You should have approximately 2 cups of crushed matzo.

Let sit for 5 minutes.

In a large skillet, melt 2 tablespoons of the butter over medium heat.

Be careful not to crowd the pan.

Cook until golden and crispy on the first side, 2 to 3 minutes.

Repeat cooking in batches with the remaining butter and matzo mixture, making about 8 pancakes total.

Serve warm with your favorite toppings (my current favorite combo is jam and sour cream).

Leftover matzo brei pancakes can be stored in an airtight container in the refrigerator for up to 4 days.
