In the spirit of my mother-in-law, I wanted to make something crisp, fresh, and easy.
So I just slice my impeccably fresh cukes and toss them with a simple, sunomono-inspired dressing.
If you are using standard cukes with thicker skins, you might peel them if you want to.
If you want to gussy it up, you certainly can.
A handful of halved cherry tomatoes and some chopped cilantro adds color.
The sugar will dissolve while you slice the cucumbers.
Peel the cucumbers if desired, and slice thinly.
Toss and serve, or cover and refrigerate until time to serve, up to two days.
