Normally, I crack and pick the crab meat myself from cooked crabs I get at the grocery store.

Just dont overcook it (some brands take as little as 2 minutes).

It also melts into a smooth, rich sauce that wont curdle like sour cream tends to.

Look for creme fraiche in the dairy aisle.

Everything is tossed together in the pot you use to cook the pasta, so theres minimal cleanup.

That means more time for celebrating and less time doing dishes.

Add 1 tablespoon of salt to the boiling water followed by the pasta.

Cook according to the package instructions; the pasta should be al dente.

Drain, reserving 1/4 cup of the pasta cooking water.

Turn off the heat.

Return the drained pasta to the pot and set on the warm burner.

Add 1 to 2 tablespoons lemon juice and more salt and pepper to taste.

The pasta will absorb the sauce as it stands.
