Mom was the office manager, though thats majorly underplaying it.
Im gobsmacked theyre still together!
She needed fuel to keep her going, something nourishing but not taxing.

Turns out shes still tweaking the recipe to this day.

Add the onion and cook until its tender but not brown, 5 to 7 minutes.
Add the garlic and cook until fragrant, about 1 minute.
Add the potatoes, zucchini, tomatoes and their juices, and herbs.
The finished dish will be on the soupy side.
Season with the salt and pepper flakes or black pepper to taste.
