The only difference the doneness of the eggs will make is the resulting texture of your egg salad.

The jammier your egg yolk, the looser your egg salad will be.
Once your eggs are cool enough to handle, peel and mash them in a bowl with a fork.
Add the cottage cheese and the hot sauce and mix to combine.
