Its hard not to love Alfredo.

Plenty of garlic and Parmesan are all the seasoning it needs to be swoon-worthy.

The same trick works at home, and you dont have to limit yourself to pasta.

The sauce is a perfect pairing with creamy white beans, too.

You dont even have to put on a pot of water to boiljust pop pop the cans and drain.

Serve with a simple salad and crusty bread and you have a satisfying meal.

Choosing the Right Beans

I use either Great Northern or cannellini beans, whatever strikes my fancy.

Both have a creamy interior and mild flavor that go well with a creamy sauce.

Dont swap in darker beans, or the sauce will turn a funny color.

Add the garlic and stir until just bubbling; dont let it brown, about 30 seconds.

Add the heavy cream and a generous pinch each of salt and pepper and bring to a boil.

Boil for a few seconds.

Gently stir in the drained beans.

Taste, adding salt as needed.
