Heat the oil in a large skillet over medium-high heat.
Add the onion and cook, stirring occasionally, until translucent, about 5 minutes.
Add the garlic; cook, stirring often, until fragrant, about 30 seconds.

Set aside to cool slightly, about 5 minutes.
Reserve 1/4 cup of the spinach mixture.
Stir until well combined and set aside.
Lightly grease a 13x9-inch baking dish.
Arrange the bottom halves of the English muffins in the dish in three rows of two.
