Sopa de ajo is hearty, easy, and simple.
If you have those ingredients (along with some salt and olive oil) you are good to go.
I think Senora Ramona would be proud.
Its different thanHungarian paprika, which is milder and sweeter.
If you dont have Spanish brandy on hand, any dry brandy or cognac will work just fine.
Add the olive oil and heat for 30 seconds.
Continue stirring until everything is coated in olive oil.
Bring to a boil, stirring occasionally.
This will create ribbons of egg.
Sprinkle the remaining 1 teaspoon of Spanish paprika on top, and serve.
