Anjou or Asian pears are good substitutes.

Bring the sauce up to a simmer and cook uncovered for 5 minutes.

Some small bubbles will come up to the surface, but it should not be a rolling boil.

The pears are ready when they are soft enough to poke through with a paring knife without much resistance.
