In fact, unless Im buying a whole chicken, I dont ever cook chicken breasts.

They are easy to overcook, and when cooked in the microwave, theyll get dry and stringy.

I would recommend sticking to chicken thighstheyll stay juicy even if you microwave them for too long.

No Mirin?

I recommendTakara, but I dont always have it.

Instead, I use aji-mirin (which translates to tastes like mirin in Japanese) made byKikkoman.

Its relatively inexpensive and does the job of adding umami, sweetness, and a little tang.

Dont have an 8x8-inch glass baking dish?

Avoid using a deep bowl to cook chicken in the microwave.

Ive tested this many, many time,s and it never cooks evenly.

Tightly cover the baking dish with plastic wrap.

Use the tip of a knife or fork to poke a couple of holes on top.

Microwave on high power for 7 minutes.

Check a larger piece of chicken towards the center of the dish for doneness.

It should not be pink in the middle.

Stir in the chicken stock.

Its going to be very hot, so use a kitchen towel or oven mitts.

The cook time will depend on the wattage of your microwave.

Serve the oyakodon over cooked rice and a side of kimchi.

Its supposed to be a little soupy, so dont forget to scoop up the liquid, too.
