I never really gave salt a second thought until Iwent to culinary school.
What I didnt realize until much later is that not all kosher salt is equal.
Theres a difference in the two major brands, Diamond Crystal and Morton.
What Is Kosher Salt?
It got its name because it was popular among Jewish butchers.
Kosher Salt vs. Table Salt
There are two main differences.
The size of kosher salt crystals creates a delicious crust whengrilling steak.
The second major difference is that kosher salt is pure sodium chloride.
Most table salt is iodized, which means it has added iodine.
Table salt also typically contains anticaking agents to prevent the small granules from sticking together.
This makes Diamond Crystal salt coarser than Morton, so it takes up more space by volume.
That means that a teaspoon of Diamond Crystal salt wont taste as salty as a teaspoon of Morton.
Bakers measure by weight instead of volume because its a more precise way of understanding ingredient quantities.
At the end of the day, dont stress too much if youre seasoningroasted vegetablesor meat for the grill.
These dishes dont contain as much salt as abrine, which might use a cup (or more!)
And remember: Start small when working with any salt, but especially table salt and Morton salt.
