Little did I know that this spur-of-the-moment meal would become a summertime staple over the next two decades.

Aside from the perishables, everything will likely already be in your pantry.

Its effortless to make and comes together in less than an hour from start to finish.

Add the pork cubes and marinate for 30 minutes.

This is the perfect time to prep the rest of the dinner.

Raise the heat to medium-high and cook everything for about five more minutes or until the vegetables soften.

Lastly, add the couscous and boiling water and stir everything to combine.

Turn off the heat, cover the pan, and let it sit for five minutes.

When it’s done, Martha suggests seasoning everything with salt and pepper to taste.

Next, preheat the grill to medium-high heat while you thread the pork onto skewers.

I will sometimes substitute the water for stock.

And if I am using water, I always season it well before mixing it with the couscous.

This meal always feels like summer on a plate.
