Unripe Fuyus have a lingering astringent aftertaste, but ripe ones have a gentle sweetness milder than Hachiyas.
When buying persimmons, look for intact fruits with smooth, unblemished skin sans bruising or cracks.
Fuyu persimmons should be firm but not rock-hard.
