It just happens to be vegan, so I always have the ingredients on hand.

Ive found lots of inspiration in these old booksretro gems and forgotten favorites waiting to be rediscovered and rejigged.

When someone told me about a vintage and unconventionally titled recipe, Depression cake, I was absolutely intrigued.

Its velvety, moist, and unmistakably chocolate.

It’s cliche, but this really is the recipe to save for impromptu visitors or celebrations.

What Is Depression Cake?

For a subtler flavor boost, you’re able to try a half-and-half mix of coffee and water.

The added molasses in brown sugar complements the chocolate and makes a softer, moister cake.

The oil likely wont fully incorporate and will float on top.

In another large mixing bowl, whisk together the flour, baking soda, and salt.

Pour the batter into the prepared pan.

When the cake has cooled, prepare the chocolate glaze.

In a medium bowl, whisk the powdered sugar, cocoa powder, and salt.

Pour in the vanilla extract and 1 tablespoon of cooled coffee or water.

It should be thick but pourable, similar to chocolate ganache or hot fudge sauce.

Serve immediately, or let the glaze set.

Store the cake, covered tightly, at room temperature for up to 4 days.

For longer storage, freeze the cake for up to 3 months.

Thaw the cake, still wrapped, in the fridge overnight.
