If you don’t have a springform pan, use a round cake pan.

A slice of blueberry cheesecake on a plate.

Butter the sides and dust with flour, then line the bottom with parchment paper.

Using an electric mixer, beat the butter on medium high speed for 2 minutes.

Add the sugar and beat until light and fluffy, a 1 to 2 minutes more.

Blueberry Sorbet

Beat in the vanilla extract.

Beat in the lemon zest, if using.

Reduce the speed of the mixer to low and slowly add the flour mixture, beating until smooth.

The batter will be thick.

Put the batter in the prepared pan, smoothing the top with a spatula.

Combine the berries with the remaining teaspoon of flour and the lemon juice in a bowl.

Remove from the oven and let the cake cool in the pan for 10 minutes.

Carefully slide a thin knife around the edges of the cake to release it from the pan.
