Avocado:This recipe uses large Haas avocados.
They’re the most popular variety and the one you’ll probably find in your store.
If you’re not a fan of fish, try thin-sliced bacon or prosciutto.

For a vegetarian option, opt-out of the animal protein and double up on the toppings.
Otherwise, any light-flavored cheese will do the trick.

Toppings:If you’re not a fan of onions or capers, feel free to leave them off.

Arrange the avocado halves on a baking sheet and line the hollows with strips of smoked salmon.
In a small bowl, combine the salt, freshly ground black pepper, and red pepper flakes.
Use a spoon to carefully transfer the seasoned yolk into the avocado well trying to keep the yolk intact.

If there are any remaining egg whites, add them into the avocado well.
Repeat the process with remaining eggs until all of the avocado halves have been filled.
Top the eggs with red onion.
