For thicker onion rings, you could cut them up to an 1/2-inch thick slices.
In a medium bowl, combine flour, cornstarch, salt, and pepper.
In a separate medium bowl, whisk together eggs and milk until smooth and cohesive.

Into a third medium-sized bowl add the panko.
Use your dry hand to pack on the panko so it sticks well.
Transfer breaded onion rings to a plate.
