Coat with flour, shaking out any excess; set aside.
Beat the butter with an electric mixer on medium until pale in color and fluffy, about 3 minutes.
Add the lemon extract or juice and beat on low speed until just incorporated, about 10 seconds.

The batter should be smooth and thick.
Spoon the batter into the prepared pan, smoothing the top into an even layer with a rubber spatula.
Let cool in the pan on a wire rack for 20 minutes.
